CARROT COOKIES 
2 c. flour
2 tsp. baking powder
3/4 c. shortening
3/4 c. sugar
1 c. mashed, cooked carrots
1/2 tsp. vanilla
1/4 tsp. salt

Mix and drop onto cookie sheet. Bake 12-15 minutes, 350 degrees. Frost while still warm:

2-3 tbsp. orange juice
1 1/2 tsp. butter
Enough powdered sugar to thicken

4 dozen cookies.
