COCONUT CARROT COOKIES 
1 c. mashed cooked carrots
3/4 c. sugar
1/2 c. softened butter
1/2 c. shortening
2 eggs
2 c. flour (whole wheat or all purpose)
2 tsp. baking powder
1/2 tsp. salt
3/4 c. shredded or flaked coconut

Heat oven to 400 degrees. Mix carrots, sugar, shortening, butter and eggs. Stir in flour, salt and baking powder. Mix in coconut. Drop by rounded teaspoonful about 2" apart on ungreased cookie sheet. Bake until almost no indentation remains when touched, about 8 to 10 minutes. Immediately remove from sheet and cool. Frost with Orange Butter Frosting. Makes about 5 dozen.

ORANGE BUTTER FROSTING:

1 1/2 c. powdered sugar
3 tbsp. butter
2 tsp. grated orange peel
About 1 tbsp. orange juice

Mix ingredients and beat until the right consistency to spread.
