CARROT-COCONUT COOKIES 
1 c. mashed cooked carrots (about 4 med.)
3/4 c. sugar
1 c. butter or Crisco (or half and half)
2 eggs
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. shredded or flaked coconut

Mix in order. Drop on ungreased cookie sheet 2 inches apart. Bake at 375 degrees for 8-10 minutes. Cool and frost.

ORANGE-BUTTER FROSTING:

1 1/2 c. powdered sugar
2 1/2 tbsp. softened butter
2 tbsp. orange juice
1 tsp. grated orange peel (optional)

Mix together.
