CARROT COOKIES 
1 c. shortening
1 c. sugar
1 egg
1 c. cooked mashed carrots
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp. lemon rind grated

Mix together. Bake at 350 degrees for 8 to 10 minutes. Ice while warm.

ICING:

1 c. powdered sugar
Lemon juice to make it thin

Use bottom of spoon to ice cookies. This is Jeremy and Dustin's and Grandpa's favorite.
