CARROT COOKIES 
1 c. mashed carrots
2 c. flour
3/4 c. shortening
1 c. sugar
2 eggs
1/4 tsp. salt
2 tsp. baking powder
1 tsp. vanilla

Mix shortening and sugar, then eggs, vanilla, salt. Add sifted flour and baking powder. Drop by teaspoons on cookie sheet and flatten. Bake at 350 degrees.

ICING:

2 1/2 tbsp. orange juice
1 1/2 tbsp. butter
Enough powdered sugar to make icing easy to spread
