CARROT DROP COOKIES 
1 c. shortening
3/4 c. sugar
1 egg
1/4 tsp. salt
1 tsp. vanilla
2 c. flour
1 c. cooked, mashed carrots
2 tsp. baking powder
1 tsp. lemon juice
1 tbsp. grated orange rind

Cream together the shortening and sugar. Add egg, the salt, vanilla flavoring, and lemon juice. Mix in the cooked, mashed carrots and grated orange peel. Sift together the flour and baking powder. Add to other ingredients. Drop by teaspoon on ungreased cookie sheet. Bake in preheated 375 degree oven approximately 10 minutes.

ICING:

1/4 c. orange juice
1 tbsp. grated orange rind
2 1/2 to 3 c. powdered sugar

Mix together above ingredients for icing. Ice cookies while warm. Makes 5 dozen.
