SHAGGY CARROT COOKIES 
1 c. coconut
1 c. shredded raw carrots
2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1 c. shortening (1/2 may be butter)
1 c. brown sugar
1 c. sugar
2 eggs
2 c. oatmeal
1 1/2 c. chopped nuts

Sift together dry ingredients; set aside. Cream shortening and sugars. Beat in eggs, one at a time. Blend in remaining ingredients, adding carrots, nuts and coconut last. Drop onto cookie sheet. Bake in 350 degree oven for 18-22 minutes. Makes 8-10 dozen.
