CARROT COOKIES 
3/4 c. sugar
3/4 c. shortening
1 lg. egg
1 c. (heaping) raw grated carrots
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1/2 tsp. lemon flavoring

Mix sugar, shortening, and egg and cream well; add carrots. Sift flour, baking powder, and salt. Add to mixture. Stir in flavorings. Drop by spoonful onto greased cookie sheet. Bake at 350 degrees for 12-13 minutes.

Frost with powdered sugar glaze made with orange juice or flavoring.
