CARROT - OATMEAL COOKIES 
1/3 c. vegetable oil
1/3 c. brown sugar
1/3 c. unsulphured light molasses
1 egg
1 c. unbleached white flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. nutmeg
1/4 c. nonfat dry milk
1/2 tsp. salt, if desired
1/4 tsp. cinnamon
1 c. grated carrots (2 med.-lg.)
1/2 c. raisins
1 1/4 c. quick rolled oats

1. In a large bowl, beat together the oil, brown sugar, molasses and egg.

2. In another bowl, sift together the flour, baking powder, baking soda, nutmeg, dry milk, salt and cinnamon. Add the flour mixture to the oil mixture.

3. Preheat the oven to 400 degrees.

4. Add the carrots, raisins and oats to the flour and oil mixture and stir the ingredients to mix them well. Drop the dough by the rounded teaspoonful about 2 inches apart onto lightly oiled baking sheets.

5. Bake the cookies for 10 minutes or until they are lightly browned around the edges. Remove the cookies to a rack to cool.
