OATMEAL CARROT RAISIN COOKIES 
1/2 c. vegetable oil
1/3 c. light brown sugar, packed
1 lg. egg
1 c. flour
1 1/2 tsp. baking soda
1 1/2 c. quick cooking oats
1/3 c. golden raisins
1/3 c. sugar
1 tsp. vanilla
1/2 tsp. salt
1/2 c. grated carrots

Mix all ingredients together and drop by teaspoonful onto greased cookie sheet. Bake at 375 degrees for 10 to 12 minutes.
