CARROT COOKIES 
1 c. cooked carrots
3/4 c. shortening
3/4 c. sugar
1 beaten egg
2 c. flour
1/4 tsp. salt
1 tsp. vanilla
2 tsp. baking powder
1/2 c. nuts

Frosting:

1 c. powdered sugar
1 tsp. melted shortening
juice of 1 orange
grated orange rind

Cream shortening, then add rest of ingredients.

Bake at 350°F for about 15 minutes. When cool frost with frosting.
