CARROT COOKIES 
1 c. shortening
2 tsp. baking pwd.
2 tsp vanilla
2 c. flour
1 tbsp. water
2 eggs
2 c. carrots, grated
1 c. sugar
1/4 tsp. salt

Mix all ingredients together, add more flour if necessary. Drop on baking sheet and bake at 350°F for 12 min. Make frosting of 2 c. pwd. sugar, fresh orange juice, butter, lemon extract and a little hot water if needed. Frost when cool.

Makes appro. 60 cookies.
