CARROT - COCONUT COOKIES 
1 c. mashed cooked carrots
3/4 c. sugar
1 c. shortening or butter
2 eggs
2 c. flour (or whole wheat flour)
2 tsp. baking powder
1/2 tsp. salt
3/4 c. shredded coconut
Orange Butter Frosting

Oven temperature: 400 degrees. Mix carrots, sugar, shortening and eggs. Stir in flour, baking powder and salt. Stir in coconut. Drop on ungreased sheet. Bake until no indentation remains when touched, 8 minutes.

ORANGE BUTTER FROSTING:

1 1/2 c. powdered sugar
1/3 c. butter, soft
1 1/2 tsp. orange juice (approximately) plus 1 to 2 tsp. orange peel
About 2 tbsp. milk

Mix and spread over cookies.
