CARROT COOKIES 
3/4 c. granulated sugar
3/4 c. butter
1 egg
1-1 3/4 c. cooked mashed carrots
2 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla extract
1/2 tsp. lemon extract

FROSTING:

1 1/2 c. powdered sugar
2 tbsp. butter
1 tbsp. grated orange peel
Orange juice

Cream sugar and butter together until creamy. Add egg and carrots; mix well. Sift flour, measure then sift together with baking powder and salt. Combine with the creamed mixture. Add vanilla and lemon extract; mix well. Drop by spoonfuls on ungreased cookie sheet. Bake in a preheated 375 degree oven for 15 minutes.

Combine ingredients for frosting. Add orange juice just until frosting is of proper spreading consistency. Frost cookies while still warm. Yield 3 dozen cookies.
