GOLDEN HONEY CARROT COOKIES 
1/4 c. shortening
1/2 c. sugar
1 egg
1/2 tsp. lemon extract
2 c. all purpose flour
1/2 tsp. salt
1/4 c. butter
1/4 c. honey
1 tsp. vanilla extract
1 1/4 c. grated raw carrots
2 tsp. baking powder

Beat together shortening, butter, and sugar until light and fluffy. Add honey, egg, and extracts; beat well. Stir in carrots. Thoroughly mix together flour, baking powder, and salt. Stir; into shortening mixture. Drop by rounded teaspoons onto greased baking sheets. Bake at 350 degrees for 10-15 minutes or until golden. Makes about 3 dozen cookies.
