CARROT COOKIES 
1 egg, unbeaten
1 c. butter
3/4 c. sugar
2 sm. jars strained baby food carrots
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1/4 tsp. salt

Cream butter and sugar until light and fluffy. Add egg, vanilla and carrots; mix well. Slowly add flour that has been mixed with baking powder and salt. Blend well. Drop batter by teaspoonfuls onto cookie sheet. Bake in 350 degree oven for 18 to 20 minutes. Remove and cool on racks. While cookies are still warm, frost with Orange Frosting. Makes 5 dozen.

ORANGE FROSTING:

Combine: Grated rind of orange 1 tbsp. butter 1 c. powdered sugar
