JESSI'S EASY CHEESY POTATOES 
2 lb. hash browns, cubed
1 (16 oz.) dairy sour cream
1 medium onion, chopped
1 lb. block Velveeta cheese
1 big can cream of chicken soup
1 bag shredded cheese

In a saucepan add the whole can of cream of chicken soup and heat that up. Dice up the Velveeta cheese (just to make it melt easier). Once you get all of the cheese in with the cream of chicken add the sour cream.

Then chop up the onion and sauté it in some butter (just until soft). Once the onion is soft add it to the soup/cheese mix.

Pour the cubed hash browns into a prepared casserole dish then mix in the cheesy cream of chicken with the hash browns.

Bake at 350°F for 1 hour covered, 30 minutes uncovered and the last 5 minutes you want to put your shredded cheese on top so that it will melt. ENJOY!!
