ALICE'S EGGPLANT 
1 eggplant
1 lg. clove of garlic
1 pkg. Mozzarella cheese (grated or slices)
1 can tomatoes
olive oil, oregano, salt and pepper

Crush garlic into tomatoes, add salt and pepper. Set aside. Peel and slice eggplant. Flour and brown in hot Crisco. Coat baking dish with oil. Arrange in layers: eggplant, cheese, tomatoes. Sprinkle lightly with oregano. Top with cheese. Bake at 350 degrees for 1 hour covered with foil.
