CHICKEN IN ORANGE SAUCE 
2 broilers or fryers (cut into serving pieces)
2 tbsp. oil
2 tbsp. matzo meal
1/2 tsp. salt
1/4 tsp. cinnamon
2 c. orange juice
1 (3 oz.) pkg. slivered almonds
1 (11 oz.) can mandarin oranges drained

In a large skillet brown chicken in oil. Remove to large shallow baking dish. To drippings in skillet add matzo meal, salt and cinnamon. Cook for 1 minute, stirring. Add orange juice gradually, stirring constantly. Cook over medium heat until thickened slightly (about 5 minutes). Pour over chicken. Bake in a 350 degree oven for 1 hour or until chicken is tender and brown. In the last 20 minutes, add almonds and oranges. Makes 10 servings.
