YUMMY BALLS 
1 1/2 lbs. ground beef
1 sm. minced onion
1/2 c. uncooked rice
1/2 c. cracker crumbs
1 egg
1/2 tsp. salt
Dash pepper
1 can tomato soup
1 soup can water

Mix beef, onion, rice, crumbs, egg and seasonings. Shape into balls and place in a greased casserole. Pour soup and water, mixed over. Bake at 375 degrees for 1 hour. Serves 6.

I've made Yummy Balls for decades, the recipe was in one of the first Sunset magazine cookbooks I bought in the 80's. The savory sauce is from the tomato soup and the fat from the ground beef. Although there's rice in them, I serve it with Jasmine rice and a crisp green salad along with some garlic bread. An easy dish to put together which then bakes for an hour. Yummy!!
