MANDELBROT
3 eggs
1 c. sugar
1 tbsp. vanilla
1 c. canola oil
3 c. flour
1 tsp. baking powder
1 c. walnuts (chopped), chocolate chips or currants

Beat together eggs, sugar and vanilla. In a separate bowl, mix flour and baking powder. Alternately add flour and oil to egg mixture. Stir in nuts, chips, or currants (dough will be stiff). Dump onto floured board, shape like a meatloaf. Cut into thirds. Shape each third so it is flat on the top, and oval like a meatloaf.

Bake at 350 degrees for 25 minutes on 2 cookie sheets. Let cool some, then using a sharp knife, cut into slices. Lay slices flat on cookie sheet. Bake 8-10 minutes, then flip over and bake 8-10 minutes on second side. Mandelbrot freezes well and may be eaten while still frozen.
