APPLESAUCE CAKE 
2 c. sugar
1 c. Crisco
3 eggs
2 c. applesauce
2 c. chopped pecans
2 c. raisins
1 tsp. baking powder
2 tsp. baking soda
2 tsp. allspice
1 tsp. ginger
1 tsp. cinnamon
1 c. bottled cherries
1 c. crushed pineapple

In a very large bowl, cream sugar and Crisco. Add eggs and beat well. Add sifted dry ingredients. Stir in pecans, raisins, cherries and pineapple; mix well. Batter will be very thick. Bake at 350 degrees for 2 hours in a large tube pan. Test with a toothpick for doneness. When completely cool, you can put a white powdered sugar glaze on it and decorate with red and green gum drop cut outs and/or pecan halves for a pretty Christmas cake.
