MARIA'S LIGHT TUNA SALAD 
2 (5 oz. ea.) cans tuna in water (I use StarKist Chunk Light)
1/2 cup chopped tomatoes
1/2 cup chopped onions
1/2 cup Mozzarella cheese, cut into cubes
1/2 tbsp. olive oil (EVOO)
1/2 tsp. lite salt (I use Morton)
1/2 tsp. pepper

In a bowl, mix two cans of tuna with all the ingredients. Mix all the ingredients together for one minute.

Put bowl in refrigerator to chill for 15 to 20 minutes (if longer, cover first with Saran wrap or cling-film).

Ready to serve! I serve this salad with non-fat pita bread or non-fat original Casabe (a thin flatbread made from cassava root).
