FRESH APPLE-NUT BREAD 
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups corn oil
2 cups sugar
3 eggs
2 teaspoons vanilla
2 cups finely chopped apples
1 cup chopped nuts

Preheat oven to 350°F. Grease and flour two loaf pans. Thoroughly stir together flour, baking soda and salt.

In the large bowl of a stand mixer, beat together at medium speed:

oil
sugar
eggs
vanilla

Gradually add flour mixture, beating until smooth. Fold in apples and nuts. Turn into prepared pans.

Bake until a cake tester inserted in center comes out clean, about one hour.
