MEXICAN CORNBREAD 
1 lb. ground meat
1 med. onion
2 tbsp. chili powder
Salt and pepper to taste

Brown ground meat with above ingredients.

2 pkgs. mexican cornbread mix

Mix per package instructions. In large iron skillet add 2 tablespoon oil. When oil is hot add 1/2 cornbread meal. All of ground meat, 1 can whole kernel corn, drained, 1 cup grated cheese and remaining cornbread mix. Bake at 350 degrees for 30 to 45 minutes.
