ERIN'S VEGAN GINGER COCONUT
BREAD
 
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cardamom
2 cups all-purpose flour
2/3 cup sugar
1 cup coconut milk
1/2 cup vegetable oil
1/3 cup silken tofu
1/3 cup stem ginger preserve

ICING:

confectioners' sugar (10X)
butter (vegan)
coconut milk

Preheat oven to 375°F.

Mix baking powder, salt, cardamom, flour and sugar. Take a hand blender, whiz up tofu, then add stem ginger preserve, then add 1/2 cup of coconut milk. Add this whizzed mixture to oil and remaining coconut milk. Then add dry ingredients to wet ingredients, mixing gently.

Put into a loaf pan and bake at 375°F for approximately 45 minutes.

After loaf has cooled, ice with glaze made from listed ingredients. Some lemon rind would work well in the icing!
