COCONUT BREADED FISH 
1 pound fish (river fish, tilapia, etc.)
1/2 pound shredded coconut
1/2 cup vegetable oil
1 box Ritz crackers or Wheat Thins
1 tsp. salt
1 tsp. pepper (red pepper for spice)

Preheat oven at 400°F. In plastic bag place fish and 1/4 cup of oil let sit while grinding down crackers until they are a powder-like consistency, add coconut, salt and pepper. Add dry mix to bag and shake well.

In an oven-safe container, use remaining oil. Scoop out enough of extra dry mix place on bottom, layer of fish, and cover with remaining dry mix. Place in oven for 20-30 minutes, turn half way; cook each side till brown.

Best served with steamed vegetables.
