COCONUT BANANA BREAD 
2 c. flour
1/2 tsp. salt
2 tsp. baking soda
3 eggs
1 tsp. lemon extract or lemon juice
1/2 c. soft butter
1/4 c. sour cream
1/2 c. sugar
1 1/2 c. bananas (3 med. sliced)
1 c. nuts
1/2 c. shredded coconut

Sift flour, baking soda and salt into a large bowl and set aside. Put eggs, soft butter, lemon extract, sour cream and sugar into blender and process at Mix until smooth. Add sliced bananas, nuts and coconut, cover nd process at Chop until nuts are chopped. Pour into dry ingredients and mix until flour is moistened. Pour into lightly greased loaf pans and bake 45-50 minutes. Bake at 325 degrees. Yield: 2 loaves.
