IRENE'S BANANA CAKE 
3/4 c. shortening (solid)
1 1/2 c. white sugar
1 c. mashed bananas
1/2 c. buttermilk
1 tsp. vanilla
2 eggs
1/2 tsp. salt
2 c. bread flour
1 tsp. baking soda
1 tsp. baking powder
1 c. coconut
1/2 c. ground nuts

Cream shortening, sugar and add bananas, milk, vanilla and eggs. Beat until creamy. Stir in flour, soda, salt, baking powder, soda and mix well. Add coconut and nuts. Bake in 2 bread pans or 4 small pans at 375 degrees for 25 to 30 minutes.
