SWEET POTATO SOUFFLE 
3 c. cooked, mashed sweet potatoes
1 tsp. vanilla
1 c. sugar
1 egg
1/4 c. milk
3 tbsp. flour
1/4 c. orange juice
1 c. butter, melted
1 tsp. cinnamon
1 c. raisins (opt.)
1 c. nuts, chopped (opt.)
Miniature marshmallows

Combine all ingredients, except marshmallows in mixing bowl. Mix well. Pour into greased 2 quart casserole. Bake at 350 degrees for 30 to 35 minutes. Remove from oven, top with miniature marshmallows and return to oven for 10 to 15 minutes. This souffle may be frozen before or after cooking.

I have been making this recipe for the last 17 years! ( Holy cow! I didn't realize it was that long! I just came here to reprint the recipe as mine is tattered and torn! ) It is a staple at EVERY holiday dinner. My kids make sure it is always on the holiday menus! It is delicious! I don't use the full amount of butter and sugar, but this recipe is easily customized to your liking!
