COCONUT PUDDING 
1 can 12oz frozen coconut milk; thawed
1 1/2 c milk
6 tbsp sugar
6 tbsp cornstarch

In a large sauce pan combine coconut milk and milk. Blend together sugar and cornstarch and stir into coconut milk mixture. Cook over medium heat, stirring frequently until mixture thickens. Pour into a 8 inch square baking pan. Chill. When firm cut into small squares or triangles.
