COCONUT JASMINE RICE PUDDING 
1 cup raw jasmine rice, rinsed
1 can coconut milk
2 tsp. vanilla extract
1 tsp. almond extract
1/2 cup sugar
1/2 cup raisins
3 cups milk

Topping:

whipped cream
ground cinnamon
ground nutmeg

Place ingredients in a double boiler over simmering water. Simmer for 2 hours or until all the milk is absorbed. Stir occasionally throughout this process. Cool.

Serve with a dollop of whipped cream sprinkled with cinnamon and/or nutmeg.
