CHICKEN CASSEROLE 
2 pkg. boneless chicken fillets
1 sm. jar chopped pimento
1 can water chestnuts, chopped
1 can cream of celery or mushroom soup
2 c. mayonnaise
1 box long grain & wild rice
1 sm. onion, chopped
1 can French style green beans, drained
Parmesan cheese
Paprika

Boil chicken until tender. Skin, bone and chop coarsely. Cook rice according to directions. Mix with all other ingredients. Topping with Parmesan cheese and paprika. Bake at 350 degrees for 30-45 minutes. Can be frozen. Thaw before baking. Garlic bread is a good addition to menu. Serves 10-12.
