CHOCOLATE CHIP BANANA MUFFINS 
2 c. all purpose flour
1 tsp. baking soda
1 tsp. salt
1 c. semi sweet chocolate chips
1/2 c. butter
3/4 c. granulated sugar
2 lg. eggs
1 tsp. vanilla
1 c. ripe bananas

Preheat oven to 350 degrees and prepare 12 muffin cups. In a large bowl mix together the first 3 ingredients of dry mixture. Stir in chocolate chips. Cream together butter and sugar with an electric mixer. Beat in eggs one at a time. Mash the bananas and add the bananas to the moist mixture. Add the moist mixture to the dry mixture all at once. Stir until batter is moist but still lumpy. Fill 12 muffin cups 3/4 full. Bake 25 minutes. Two large or three medium bananas, yield 1 cup of mashed bananas.
