CHOCOLATE CHIP MUFFINS 
2 c. flour
3 tsp. baking powder
3/4 c. mini-chips
3/4 c. milk
1/2 c. sugar
1/2 tsp. salt
1 egg, beaten
1/3 c. oil

TOPPING:

3 tbsp. brown sugar
1/2 c. sugar

Heat oven to 400 degrees. Line or grease bottoms of 12 muffin cups. In medium bowl, combine flour, 1/2 cup sugar, baking powder, salt and chocolate chips. Stir in egg, milk and oil just until dry ingredients are moistened. (Batter will be lumpy.) Spoon batter into muffin cups, filling 2/3 full. In small bowl combine topping. Sprinkle evenly over muffins. Bake 20 to 25 minutes. Loosen and remove immediately from pan.

This is a really good muffin recipe, but I would change the topping preparation or leave out altogether. While the muffin mix was perfect for 12 muffins, the topping made way too much and needed butter or margerine to be a true crumb topping. Prepared as suggested in the recipe, the sugar on top just crumbles off when you remove the muffins from the pan and became more messy than anything.

This was a very easy and very delicious recipe, I made half of the topping recipe and still used only half of that, they were perfect!!
