BUTTERMILK SCONES | |
1 1/3 c. unsifted flour 1/2 tsp. baking soda 1/2 tsp. salt 1 tbsp. sugar 1/4 c. butter, softened 2 tsp. grated orange peel 1/2 c. raisins (optional) 1/2 c. buttermilk About 1 tbsp. melted butter About 1 tbsp. sugar Sift flour together with the soda, salt and sugar into a bowl. Cut in the butter with a pastry blender until crumbly. Add orange peel, raisins and buttermilk; stir with a fork until well blended. Turn out on a lightly floured board and knead 5 to 6 times. Pat into a 1/2 inch thick round (2 rounds for smaller pieces as for tea) and cut into 6 wedges each round. Transfer to lightly greased baking sheet. Brush with melted butter then sprinkle with sugar. Bake at 400 degrees for 15 minutes or until lightly browned. Split and butter while hot and serve with preserves. |
