BANANA NUT COOKIES 
1/2 cup shortening
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1 cup mashed bananas
1/2 cup milk
1/2 tsp. vanilla
3 cups all-purpose flour
1/4 tsp. salt
1 tsp. baking powder
1/2 cup finely chopped walnuts

Cream shortening and sugars, add eggs, beat. Add bananas, milk and vanilla. Stir. Add flour, salt and baking powder; stir. Add nuts and stir once again. Drop by teaspoon on greased cookie sheet.

Bake at 375°F for 15 minutes, approximately.

These are simple to make with a simple banana flavor. You could jazz them up with some cinnamon or ginger, allspice, etc. But they're lightly sweet and tasty on their own.
