BUTTERMILK SCONES | |
1/2 pt. (1 c.) buttermilk 10 oz. (2 1/2 c.) flour 2 tsp. ammonium bicarbonate powder (can be bought at any chemist) or baking powder Salt Dissolve the ammonium bicarbonate in 2 tablespoons buttermilk. Mix flour into rest of buttermilk until soft dough is formed. Add a pinch of salt, ammonium bicarbonate, and mix well. Turn out on a floured board or table, roll lightly and cut into 2 inch scones. Put on a lightly greased baking sheet. Bake in hot oven (400 degrees electric; gas regulo 5) for 15 minutes. Serve hot, split with butter. Makes 12. Ammonium bicarbonate can be used in place of baking powder and in the same quantity for small cakes or buns. The bicarbonate must first be dissolved in liquid before adding to the flour. |
