KEYMA (RAW MEAT) 
1 lb. lean lamb or tenderloin steak, ground three times
1 c. very fine wheat
1/2 can peeled tomatoes, crushed before adding to meat
Salt and pepper to taste

Mix the meat together with the wheat a little at a time, as the meat gets dry. Add some tomato mixture to get it moist until all the tomatoes are used up. The mixture should be soft but not too soft.

1 onion, chopped fine
1/2 bunch chopped parsley

Mix together and sprinkle on keyma. Eat this way or chill.
