RAW LECSO SALAD 
1 lg. onion
500 g green or yellow peppers (1 1/4 lb.)
250 g tomatoes (1/2 lb.)
2 tbsp. oil
1 tbsp. red paprika
200 ml (7 oz.) tartar sauce
2 hard boiled eggs
100 g (4 oz.) Spam or cooked ham (in 1 piece)
Salt, pepper

Sweat the sliced onion in the oil in a pan, until transparent. Then add the red paprika, the washed, cored and sliced peppers and the quartered tomatoes. Stir well, cook for 2 to 3 minutes, then remove from the heat and leave to cool.

Put in a deep salad bowl, add the Spam and hard boiled eggs cut into cubes and the tartar sauce. Season to taste with salt and pepper, then toss lightly. Chill in the refrigerator for 1 to 2 hours. It is an excellent cold supper for a warm summer evening.
