SWEET AND SOUR PORK 
Oil for deep frying

BATTER:

1 egg
1/2 c. flour
1/2 tsp. salt
1/4 c. water

1 lb. pork shoulder, cut into 3/4 inch pieces

SAUCE:

1 c. pineapple cubes
1 green pepper, cut into squares
1/4 c. vinegar
1/4 c. brown sugar
3/4 c. water
1 tbsp. molasses

THICKENING:

2 tbsp. cornstarch
1/4 c. water

Heat oil in deep frying pan. Mix the batter, and dip the pork cubes into this mixture, drop into the hot oil. When they brown, remove them and drain on absorbent paper. Mix the ingredients for the sauce into a pan and bring slowly to a boil, stirring constantly. Pour the thickening in the sauce, and when it becomes thick and smooth, add the meat and mix well. When very hot, serve at once. Makes 4 servings. Some people prefer it served on a bed of rice.
