SMOTHERED BEEF 
1 tbsp. shortening
2 lbs. lean beef, cut into 1 inch cubes
1 clove garlic or 1 tsp. garlic salt
8 oz. can tomato sauce
1 c. water
1 tsp. salt
1 tsp. sugar
1/4 tsp. dry mustard
1/8 tsp. black pepper
1 lb. sm. white onions or 1 lg. onion, chopped
Cooked rice

Melt shortening in heavy kettle; brown beef on all sides over high heat. Add garlic or garlic salt, tomato sauce, water, salt, sugar, mustard and pepper. Bring to boil; cover; simmer for 1 hour.

Add onions, cook for 20 minutes longer, or until tender. Serve over rice. Serves 6.
