OAT BRAN MUFFINS | |
1 c. oat bran or 1/2 c. oat bran & 1 1/2 c. rolled oats, 1 c. rolled oats or 2 c. rolled oats - whatever combination you desired to make up the 2 cups of oats 1 tsp. cinnamon 1/2 tsp. baking soda 1 tsp. baking powder 1 (8 oz.) nonfat yogurt 1/4 c. Puritan (canola) oil 3 egg whites, slightly beaten 2 tbsp. pure maple syrup, or honey, or brown sugar 2 tbsp. raisins or dried sweet pitted cherries 2 tbsp. sunflower seeds (optional) Mix dry ingredients together, add rest and mix thoroughly. Spray muffin tins with Pam or whatever. Spoon mixture into tins and bake at 350 to 375 degrees 17 to 20 minutes. Makes about a dozen full size or 16 to 20 small muffins. Enjoy! |
