HEALTHY BRAN MUFFINS 
7 1/2 oz. Raisin Bran cereal
1 1/4 c. wheat flour
1 1/4 c. white flour
1 tsp. cinnamon
2 1/2 tsp. baking soda
3/4 c. honey
1 whole egg (5 grams of fat can substitute 2 egg whites)
2 egg whites
1/4 c. canola oil
1/4 c. fat free yogurt
1 pt. buttermilk

Mix together and let set overnight. Bake at 400 degrees for 15 to 20 minutes. I add nuts to the top of mine before baking. They kind of toast and are a real delight to eat. Also, chopped dates make them even better. You can just experiment and see what you like best.

Leave off the nuts and this is a very low fat food.
