WAKE UP HEALTHY MUFFINS | |
2 c. flour 1 c. wheat germ 3 tsp. baking powder 2 tsp. cinnamon 1 tsp. pumpkin pie spice 1/2-1 tsp. salt 3/4 c. oil 4 lg. eggs 1 3/4 c. sugar 2 tsp. honey 2 c. grated carrots 1 c. grated zucchini 3/4 c. raisins 1/2-1 c. chopped nuts 1/2 c. crushed pineapple, drained Sift dry ingredients together and set aside. Put eggs in large bowl and beat lightly. Add oil, sugar, honey and mix well; then add rest and mix well. Add dry flour mix to egg mix and mix only until moist. Fill muffin tins 2/3-3/4 full. Bake at 350 degrees for 20-25 minutes. Makes 24 large or 30 regular muffins. |
