HEALTHY MUFFINS 
1 c. skim milk
2 egg whites (replaces 1 whole egg)
1/4 c. applesauce (replaces 1/4 c. oil)
1 1/4 c. Nabisco 100% Bran
1 c. unbleached flour
1/2 c. sugar
1/2 tsp. baking soda
1/2 tsp. salt
2 1/2 tsp. baking powder
3/4 c. fruit (opt.), raisins, blueberries, etc.

Preheat oven to 400 degrees. Combine milk, egg whites, applesauce and bran. Let it stand for 15 minutes until completely moist. Combine dry ingredients. Add to bran mixture. Let stand for 10 minutes. Fold in the fruit (optional). Pour into cupcake liners and bake for 20 minutes. Makes 12 muffins.
