HEALTHY, DELICIOUS BRAN MUFFINS | |
3 c. All Bran (about 1/2 box of 13 oz. size) 1 c. boiling water 1/2 c. shortening 1 1/2 c. sugar 2 1/2 c. flour 2 1/2 tsp. baking soda 1 tsp. salt 2 eggs 2 c. fresh buttermilk 1 c. raisins, nuts (opt.) Pour boiling water over bran and shortening; let set to soften. Mix remaining ingredients....dry together first....then add eggs and buttermilk. Mix well. Pour in bran mixture; stir well. Add nuts, raisins if desired. May refrigerate up to 6 weeks. Makes about 3 to 4 dozen. Bake at 400 degrees for 18 to 20 minutes. |
