HEALTHY MUFFINS | |
1 c. finely crushed cereal (Cheerios, Bran Flakes, Wheat Chex, or combine all three) 1 c. flour 1/4 c. whole wheat flour 1/2 c. firmly packed brown sugar 1/2 tsp. baking powder 3/4 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. allspice 3 tbsp. canola oil 1 egg white 1/2 c. skim milk 1 c. applesauce 1/4 tsp. ginger 1/4 tsp. cloves Put all dry ingredients into large bowl. Mix well. Add applesauce, skim milk, egg white and oil. Stir just enough to mix well. Pour batter into prepared muffin tins and bake at 425 degrees for 8-12 minutes. These muffins can be frozen until ready to be served. Just reheat in oven. |
