MOCK APPLE CINNAMON RINGS 
15-20 golden lg. cucumbers
2 c. pickling lime
8 1/2 qt. water
2 c. red hots (cinnamon candies)
2 c. water
1 c. vinegar
3 oz. red food coloring
8 1/2 qts. water
3 c. vinegar
10-15 c. sugar
6 sticks cinnamon

Peel, core and slice cucumbers 1/4" to 1/2". Mix pickling lime and 8 1/2 quarts water. Soak cucumber rings in solution overnight. Mix red hots with 2 cups water. Dissolve overnight (red solution). Drain cucumber rings, wash and soak in clear water 3 hours; drain. Simmer 1 cup vinegar, food coloring and 8 1/2 quarts water. Then pour the brine over drained cucumbers. Leave cucumbers in solution 2 hours; drain. Discard solution.

Make syrup with 3 cups vinegar, sugar, cinnamon sticks (broken) and red hot solution. Pour this syrup over cucumber rings for 1 day. Pour syrup off and reheat it. Pour over rings again for 1 day. On the 3rd day, pour off syrup. Reheat to boiling, pack in jars and pour over them and seal.
