EASTERN SHORE / MARYLAND CRAB
CAKES
 
1 egg, beaten
1/2 tsp. seasoned salt (Lawry's)
1/2 tsp. Old Bay seasoning
1/8 tsp. pepper
1 tsp. French’s mustard
2 drops hot sauce
1 tsp. horseradish
1 tsp. Worcestershire sauce
6 tbsp. mayonnaise (Hellmann's or Best Foods)
1 lb. fresh crab meat
3 tbsp. melted butter
3 tbsp. bread crumbs or dry cracker meal

Combine first 9 ingredients; stir well. Stir in crab meat, butter and bread crumbs. Shape mixture into 8 patties.

Melt enough butter in frying pan to cover bottom. Cook at medium heat. Turn when golden brown. Drain on a paper towel.
